Going gluten free has become an integral part of mainstream dining in the States, and France is now offering gluten free options with much more regularity. Let's take a P'Niche peek to find out more about how to enjoy a gluten free holiday in the City of Light and other such delights...
Let's start at the beginning. What is gluten?
Simply stated, gluten is a protein found in the grains wheat, barley, rye, and triticale.
As such, gluten is most commonly found in foods like bread, baked / bakery goods, crackers, pasta, and cereals.
It doesn't end with bread. Gluten can also often is also found in caramels, licorice, soy sauce, barbecue sauce, and a wide variety of salad dressings.
In truth, these days, is it hard to find foods without gluten on market place stands, stalls, and offerings.
That said, and more recently, many people are opting for an unabashedly gluten free diet. Some reasons may include, but are not limited to:
Celiac Disease - an autoimmune disorder wherein the ingestion of gluten can lead to damage of the small intestine
Non Celiac Gluten Sensitivity - featuring symptoms similar, but not as extreme as Celiac Disease
Wheat Allergy - simply to avoid mild allergic reactions similar to the above
